We are only a few weeks away from Easter which was always one of my favorite holidays. I loved the fact that Easter usually marked the beginning of warm spring days ahead and was accompanied by the best brunch (one of my favorite meals), an easter egg hunt, and celebrating the sacrifice Jesus made for our sins. Despite the amazing memories from my childhood Easter celebrations, I’m looking forward even more to Easter this year and celebrating with my kiddos. My oldest, now three, loved Easter last year. This year will be that much sweeter as he understands more the meaning of the holiday. I can’t wait to see his enjoyment from decorating Easter eggs and participating in an Easter egg hunt.

Easter Brunch 

A breakfast buffet has always been one of my favorites and Easter is the best excuse to go all out! This year we are planning on hosting some of our friends for Easter brunch. Although my husband will probably do most of the cooking (he is the “maker” in my family as my son likes to say), I'll be contributing baked goods, including my son's favorite chocolate chip muffins, and setting up a mimosa bar. 

I'm excited to share this muffin recipe with you. It's a simple, healthier option that has become a staple in our morning routine. I often bake a batch to freeze, making for a convenient and quick breakfast option.

Easy Healthier Chocolate Chip Muffin Recipe Your Toddler Will Love! 

Ingredients: 

  • ¼ cup sugar 

  • 1 tbs applesauce 

  • 1 egg 

  • 2/3 cup skim milk 

  • 2 cups Bisquick Heart Smart 

  • 1 tsp vanilla 

  • Semi-Sweet chocolate chips- as desired (I use about 2/3 cup)

  1. Heat oven to 350 degrees 

  2. Spray or line cupcake pan 

  3. Combine all ingredients and pour evenly into the pan 

  4. Bake for 10-15 minutes until golden brown 

  5. Enjoy! 

Recommend serving warm (I heat up the muffins in the microwave for about 10 seconds) or freezing and then defrosting individually for a quick breakfast!
